The term “food allergy” is widely misused and misunderstood.
Let me explain…
The terms food allergy and food intolerance does not mean the same thing. A food intolerance, unlike a food allergy, does not involve the immune system and is not life-threatening.
Let’s take Lactose intolerance as an example. If you have an intolerance to milk then you have trouble digesting the milk sugar lactose. Your symptoms may include abdominal cramps, bloating and diarrhoea.
A food allergy on the other-hand; occurs when the immune system reacts to a certain food.
The protein in food is the most common allergic component and a reaction occurs when the body creates immunoglobulin E (IgE) antibodies to the food. When these IgE antibodies react with the food, histamine and other chemicals (called “mediators”) are released. Your immune system thinks it is under attack and causes an allergic reaction.
So, given a choice: You would probably rather have a food intolerance than a potentially life –threatening food allergy right?
Trouble is…we don’t get to choose because…
Allergy rates have massively increased over the past 20 years.

So Who Am I And Why Should You Listen To Me?
Let me take you back to when I started my own business almost 10 years ago in the Beauty Industry.
There were many aspects of owning and operating my Salon that I loved, but the best part was connecting with people and building strong, open and honest relationships with my clients.
Being required to ask questions to help establish a client’s personal and medical history was part of my salon procedures. Probing and prodding a little here and there to uncover what kept my clients awake at night, and determine their fears and frustrations really helped me understand and develop the right services and treatments to provide to them. You see I wanted to make a real difference to their lives.
I seemed to be hearing more and more about two emerging “trends” – Vitamin D deficiency amongst my clients and their discovery of a food allergy within their family.
I became intrigued and remembered that even members of my own family experience food allergies and intolerance to Wheat, Milk and Seafood!
So, I started surfing the internet for any information on food allergies. I found many clinical sites which scared me half to death when describing that allergic reactions can include life-threatening anaphylactic responses such as biphasic anaphylaxis and vasodilation.
I felt like I was reading a whole new language. I became quite frustrated and confused with the huge volume of information available, especially when so much of it was written in medical jargon. I am tertiary educated with further qualifications as a beautician and laser technician, yet I still found the information confusing!
And then I spoke to my Mum!
She reminded me in the mid 1980’s she had suffered from quite bad migraine headaches. Although initial tests with her GP showed no apparent reason for them she gradually became increasingly ill and tired. Experiencing symptoms similar to that of having the flu.
By the end of 1996 she could no longer function at her work!
Looking for answers she met with several medical experts and over a period of years tried many types of remedies both herbal and homeopathic to varied success.
She found a new doctor who seemed to have some answers.
He suggested it could be food allergies.

Mums test showed several mild food intolerances but the main culprit was wheat or more specifically gluten.

Let me tell you a bit about the seven people who were interviewed. Their food allergy was caused by some of the most common foods, referred to as
THE BIG EIGHT:
These are real stories, about real people, who had been diagnosed with a food allergy and openly share their “here’s how it happened” stories and “this is how I deal with it”.
First; there is Beth’s story, whose son was diagnosed as having several food allergies when he was just 6 years of age. As a very young child, Beth’s son had always been underweight, but they never suspected or considered that it was due to a food allergy.
Beth re-lives the terrible event “In addition to the continuous vomiting, he also started to break out in hives and was itching all over his body. He was sneezing a lot, had itchy eyes, and his nose just wouldn’t stop running.”
Beth’s son then went through a series of examinations and tests in order to try to get to the bottom of what caused the intense reaction. Results showed that their son was allergic to soy protein, tree nuts, peanuts and legumes and that he also suffered from cat and tree pollen allergies too!
Beth says her family has taken every action to learn as much as they can about her son’s food allergies and shares methods and basic rules she and her family applies to accommodate their son’s allergies.
Mary Ann’s Story
Mary Anne’s story is quite scary…as it relates to her six year old son. He suffers from two allergies and is anaphylactic to both sesame and eggs.
“We first discovered his allergy when he was only 14 months old!”
Until he is much older, Mary Ann must make sure if her son is in other people’s care they understand and learn how to use the EpiPen in case he is ever exposed and has a reaction.
What happened will astound you as Mary Ann remembers, “I had been preparing a dip of hummus with a recipe taken from a health cook book for children, my son only took a small lick on the tip of his tongue when suddenly his skin turned completely red, hives instantly appeared on both his hands, and his face began to swell. Worst of all, his voice completely disappeared, and my little boy started pointed in his mouth, perhaps as a way of telling us that he couldn’t breathe. We called the ambulance immediately, and he began vomiting as we waited for them to arrive.”
Although the experience was shocking it did lead them to getting their son tested for any other allergies, and the results confirmed that he also suffers from an allergy to eggs.

Desiree’s parents first discovered that she was allergic to Peanuts when she was just a kid, and it’s believed that she was born with the allergy. You see, she was tested for it at a very early age because her Father has a severe allergy to peanuts.
“I was put through a whole series of tests, including a skin test and blood test and it was discovered and diagnosed that I had an actual peanut allergy.
I’ve always grown up knowing about my severe allergy to peanuts, and accustomed to altering my life accordingly. I’ve had to carry an EpiPen around with me since I was young and was taught how and when to use it myself.”
Desiree is now 26 years old and any hope that she may ‘grow-out’ of her allergy has faded. The biggest challenge for her managing her food allergy is the need to always be mindful what food she eats when not at home. Desiree explains what happened when she had a momentary lapse in judgment! Desiree explains in her own words what that experience meant to her, “the experience has made me even more diligent, which I suppose is a good thing overall.”
Dean thinks it is pretty ironic that he has an allergy to shellfish and an intolerance to fish… given that he grew up by the beach and fishing was a child-hood past time!
Although he recalls as a family they were plain eaters, seafood and fish was plentiful. Any ‘tummy upsets’ he experienced as a boy were quickly brushed aside as having been the result of a sensitive stomach or caused from over excitement.
The symptoms he gets from eating prawns and crab meat have always been the same – either a feeling of nausea and /or vomiting. In the end, Dean came to his own conclusions; although he admits “maybe I was just slow in realising a connection” he eventually decided to eliminate Shellfish from his diet completely.
Dean also discovered that he has reactions to some fruits and if he eats mangos his throat gets very ‘prickly’ and tight, whilst melons, make his lips go ‘tingly’. Now, more out of precaution, he avoids drinking tropical drinks in case there is a hint of mango or melon.
Dean says he is lucky not to have a life-threatening reaction to shellfish or that his reaction is not that strong that he needs to avoid cross contamination. Overall he has found it easy to get into the habit of avoiding or checking and asking if foods contain shellfish.

Heather’s story is fascinating…she couldn’t ‘work out’ why she had such terrible mood swings as young teenager. As she explains… “I had always thought it was the sugar in food that made me feel crazy and behave irrationally. Now, I know that it was as a result of gluten.” But at first, her doctor prescribed medication for depression! It was years later that she began to look for alternatives and began to look at her diet.

Jeff only recently discovered he had an allergy to corn. You see, he had suffered from really bad headaches growing up and didn’t really know what caused them.
